Whether it’s picking apples and drinking cider, having fun on a hayride, walking amongst the colorful trees, or even playing in the pumpkin patch, your fall fun will very likely involve food. This is the time of year when leaves are supposed to turn a different color and fall to the ground. But humans? Not so much.

Stop Foodborne Illness, the national nonprofit representing individuals and families in the fight against foodborne pathogens, wants to make sure you can fully enjoy this beautiful time of the year. So, here are some ideas for keeping your loved ones and your food safe.

Before you get into the frolic and fun of fall, knowing these tips for eating outside ensures the awesomeness of autumn:

• Wash your hands, before and after! Are you petting animals, riding rides at the fair, using “the facilities”, changing diapers, eating corndogs, or any one of a million other actions? Remember: Washing your hands is like a do-it-yourself vaccine to avoid getting sick.
• Store perishable foods in a cooler or insulated bag. When transporting food that needs to stay cold, place it in a cooler or insulated bag, with a cold source such as ice or commercial freezing gels. Avoid putting ready-to-eat foods in direct contact with ice.
• Keep perishable ready-to-eat foods chilled right up until serving time. Cold foods need to be kept at a temperature of 40 °F or below. Organize your cooler contents (keeping beverages in one cooler and perishable foods in another) and reduce the number of times the cooler is opened. Remember: A full cooler maintains its cold temps longer than a partially-filled cooler.
• Keep foods to be cooked, separated and chilled until it time to cook them. If the day is warm, as much as is possible, avoid keeping the cooler in the hot trunk of the car. Remember: Keeping raw meats and poultry (and their juices) separate from other foods avoids the potential for cross-contamination. Use dedicated dishes to keep raw meat separate from cooked meat. Raw meats should be cooked as soon as possible after transporting.
• When it’s time to cook, have your thermometer ready. Thermometers are easy to transport and use. Remember: For cooked foods to be safe, they must reach a safe internal temperature.
• How long have we been eating? Remember the Two-Hour Rule: Food cannot be out (at air temperature) for more than two hours; one hour if it’s hotter than 90 °F outside. Throw out any perishable leftovers.

If picnics aren’t your thing, head down to the local farmers’ market, tailgate with your buddies, venture off to go apple picking – just get outdoors and enjoy all the “feels” of the season – so many great smells, tastes, and textures to be had:

Your local farmers market is the perfect place to enjoy sweater weather and buy local produce. Remember: All food, whether it’s from a local farm or a chain supermarket, needs to be washed and handled safely.
• If you’re buying meat or dairy be sure it is kept chilled in a refrigerator (or closed cooler filled with ice) to keep the temperature sufficiently cold (40°F or below). Meat and poultry that is exposed or unpackaged, or not refrigerated, should not be purchased.
• Be extra safe and consider these questions and tips for having the best experience at the outdoor market.
• Cheese and meat should be kept cold
• Pathogens don’t discriminate: No matter if the farm is large or small, and no matter if the foods are organically or conventionally produced, pathogens could still be present.

Tailgating with friends and family is a fun way to support your team, hangout with your people, and show off your grill-skill. Here are some additional tips for keeping pathogens from crashing your party:
• To reduce the likelihood of cross-contamination, keep raw meats and poultry away from other cold foods and beverages by using separate coolers or insulated bags for transport. If it’s hot out, avoid putting food in the (even hotter) trunk of the car.
• Avoid the “temperature danger zone” 40°F – 140°F (where bacteria quickly grow to harmful levels) by keeping raw meats and poultry in a cooler with ice.
• Make 2 batches of sauce: one for marinade (raw meat) and one for basting (cooked meat). Always marinade in the fridge, not the counter. Set aside a portion to be used later, on fully cooked meat.
• Use separate utensils and dishes for raw and cooked food.
• Remember: You’re cooking for people you care about, so don’t guess on doneness by color or time – use a meat thermometer and be sure.

Whether you’re picking, bobbing, pressing, or caramelizing, apples are the perfect fruit for a fully fabulous fall afternoon.
• Thoroughly wash your apples with clean drinking water to prevent any contamination (of course, wash your hands before coming in contact with any food).
• Before drinking cider (or juice) at the orchard, or purchasing a jug to take home, make sure it is pasteurized. Pasteurization kills harmful bacteria, such as Listeria or Salmonella, without reducing the nutritional value. Unpasteurized (or raw) products pose a dangerous risk, especially to those with immature or suppressed immune systems.
• Pick the apples off the tree, not the ground. Any fruit laying on the ground is more susceptible to picking up pathogens, and other undesirable toxins. Eating apples from off the ground is not recommended unless they are thoroughly cleaned and cooked.

I have a confession to make: I love food and I can’t cook. Well, I am good with the microwave but that’s it as far as I’ll go with the appliances in my kitchen.

I love watching pretty much everything on the Food Network, but trying their recipes doesn’t end well. And now there are all these home meal kits and home delivery services, like Plated.

It’s like the universe is telling me to give cooking one more try.

So, I decided to take small steps. I didn’t want to get too deep into the cooking process; I wanted something that has little prep time, has simple recipes and uses quality ingredients – nothing processed or too spicy. I don’t know about you, but I am a wimp when it comes to spicy foods.

I wanted to find an affordable family meal plan, delicious dishes my entire family would like. I didn’t want to go too specialized, like a personal meal plan like Atkins either.

While hunting around online, I learned about all the meal kit delivery programs and the prepared foods you could buy on Amazon. I didn’t want to do what everyone else was doing. Then I came across What A Crock.

It’s a meal-kit delivery service that prepares meals to be made in a crockpot. What a cool idea!

As I read more about the company, the more excited I got. They make the meals in their kitchen, so everything is portioned correctly and tested. I was very interested in their portions because I tend to eat too much in one sitting, which makes it harder to lose weight.

You can purchase a meal in one of their stores or purchase online. I looked at their menu and everything looked and sounded delicious. But how would they taste? Could these chef-designed recipes really be made in a crockpot? I decided to take the leap and purchased five dinner meals and a dessert (I couldn’t resist). I told my family what I was doing, and they were skeptical of the idea, not because of the company, but of me actually following directions and cooking (yes, it’s cooking because I am using a crockpot).

Ordering on their website was easy and they had a lot of meal options. I was spared a trip to the grocery store the week I planned the meals. My weekly menu consisted of chicken, beef, sausage, pasta, vegetables and pork – and a brownie. How it works is that you simply dump the meal pouches into the crockpot, set the temperature and go!

Monday – Chicken Pot Pie Stew

I chose this meal because it got me geared up for the cooler temperatures of fall. The ingredients read like a daily harvest of vegetables: carrots, corn, peas, and potatoes. It even came with an herb sauce (one less thing for me to make). The prep time was about five hours and all I had to do was drop it in the crockpot. There was a tip to add Pillsbury dough on top, but I didn’t get around to getting the dough. I worried that the stew would be watery, or like soup, but it wasn’t. It was delicious! I couldn’t believe that it tasted like home cooking. The vegetables weren’t mushy, and the sauce was tangy, not spicy. This is going to be on my “cooking list”! My only issue is that it doesn’t take as long as the other meals to make. It was a good thing I left work early to make this meal.

Tuesday – Sausage Meatballs

Nothing makes a Sunday meal special like meatballs and pasta. The meatballs are made from Maglio’s sausage. Maglio’s has been a staple in Philadelphia (PA) for over 60 years. They specialize in making quality sausage for retail food businesses. The meatballs were a good size and quite juicy. The meal comes with Grandma’s gravy, which adds even more flavor to the meatballs. The pasta completes the meal and is hearty (and saves me another trip to the grocery store). The proportioned ingredients were easily put together too. I was surprised at how this freshly-made meal reminded me of eating our favorite Italian restaurant.

Wednesday – Old Fashioned Pot Roast

I swore I would never make pot roast for my family since I wasn’t a fan of it growing up. But, the image and the description on the website won me over. It comes with a large cut of beef and a vegetable medley. It takes longer than the other meals, but it was worth the wait. The beef was so tender, and the vegetables were delicious – a mix of carrots, onions, celery, and red potatoes. However, my daughter didn’t care for the sauce. And you must make sure the crockpot is filled at least a quarter of the pot or the sauce will burn. I’m not sure if I am putting on “cooking list.”

Thursday – BBQ Pulled Pork Sandwich

I was very hesitant about making pulled pork in a crock pot. We have a few restaurants near us that make great pulled pork sandwiches. Yet, the pork came out great! It was so easy to pull apart with a fork. It had the ingredients you’d expect with a southern BBQ sauce, including paprika, molasses, and brown sugar. It was sweet and spicy, a good balance. I don’t care for sauces that one or the other. The website has some great recipes for serving the pork. Again, this dish takes a long time to make. So, this and the pot roast would be good for the weekend.

Friday – Mexican Chicken Fiesta

I thought I would end the work week on a festive note. My family has had authentic Mexican cuisine, so this was a no-brainer. You get strips of chicken breast that are cooked in a light chili sauce. Remember, I am not one for spicy food, but I was able to enjoy this sauce. There were green peppers, corn, bean, and onions. Each portion is a two-person meal, so I doubled up. I like having leftovers! I put the chicken and sauce in super-soft flour tortillas. You can also make it as tacos. For a heartier meal, add rice.

Friday Dessert – Vegan Double Chocolate Brownie

I just had to try this! It’s not for the crock pot, but it looked so good. It does have a fudgy-brownie consistency and didn’t have the oily taste as some box brownie mixes have. One bar is pretty big, but I am a die-hard chocoholic and got four bars (don’t judge). I suggest warming a bar up and adding a scoop of vanilla or pumpkin (seasonal) ice cream.

That is until Leanne Foreman developed Easy Read Recipes – a recipe format that provides the cook with a low stress process, and the family with nutritious meals.

“The idea for a more logical recipe format began when I became a time poor mother to a son with autism and ADHD, and a daughter with dyslexia," said Leanne, a former Home Economics teacher.
"It became important for me to have quick and easy-to-read recipes to get the dinner on the table in the least amount of time.”

As her children grew to be teenagers, Leanne felt that it was even more important for them to learn to cook for themselves. However, this was problematic when recipe books were so difficult for them to read and follow. To solve this, she decided to use her studies in education, computing and nutrition to refine her recipes in order to help make cooking “real food, real easy”. She developed a now patented recipe formatting method that is used to create her easy to read recipes.

Leanne has incorporated over 25 subtle criteria needed to make her inclusive recipes as easy as possible for as many as possible to read and follow. She figured if it would help her children, it would help all cooks. As a result, she often gets asked, “Why aren’t all recipes written this way?”
