Cooking technique solutions
Beans need one or more plant based carrier ingredients to give them texture and binding qualities to create a slice-able entrée protein. A firm polenta with roasted chopped nuts is a good example of a slice-able protein. Beans work well in plant and meatloaf (vegan or with meat). In working and developing a few plant based cooking techniques to integrate pulsed into center plate entrees I have come up with some simple solutions exemplified in the pictures.
How does one calculate their daily protein needs?
The American Dietetic Association (ADA) formula is: Divide your body weight in pounds (i.e. 150 lbs.) by 2.2. (kilogram) which is 68 kilograms. Multiply that number by .8. We need .8 grams of protein per kilogram of body weight. Your protein need would be 54 grams of protein. The fifteen grams of protein in a cup of pinto beans covers 25% of the protein needs for the 150 lb. person.

The UN FAO believes that pulses are the sustainable protein for humanity, especially 3rd world countries, and food security and sustainability. Some of the construction work will result in several short business closures and/or relocations.

•Bath & Body Works will be closed from July 1-4 while they move to a temporary space at 450 SW Powerhouse Drive, just down the street from their existing location next to Grafletics. The store will operate from the temporary space from July 4 through late September while their primary location is completely remodeled.

•Anthony’s at The Old Mill has created a new sliding wall feature in its bar area, which allows for an indoor-outdoor dining experience for visitors. Direct from Gonzales Farms strawberries are the seasonal specialty right now and featured in cocktails, sauces and desserts.

•Rideshare pick-up/drop-off, a new formal location near the Les Schwab Amphitheater for users of Lyft and other taxi services. The covered area is located across the flag pedestrian bridge to the southwest, adjacent to the Hampton Inn.

•Hilton Garden Inn is currently renovating all of its guest rooms, restaurant, lobby and facilities. The hotel remains open during construction and the new elegant and modern remodel is expected to be complete by mid-August.

•Ginger’s Kitchenware has recently brought in a new in-store olive oil and balsamic vinegar tasting bar. Using glass containers that can be reused, patrons can now try a wide variety of amounts and flavors of these staple cooking products at home. Some even work to make sipping vinegars.

•New patios at Hola, Kona Mix Grill, Ben & Jerry’s and Boxwood Kitchen that include awnings, planter boxes and extended seating options.

•New rooftop deck will be added above Strictly Organic coffee, which all visitors to the Old Mill District will be able to use and access from the second level. It is slated to be open in September.

•American Eagle will be closed for remodeling for ten days starting September 23, 2019. The store is installing new maple wood floors and replacing existing entryway tile, installing new shelves and store fixtures and completing several other maintenance activities. They expect to be open for business as usual in early October.

HOUSTON–Texas author and chef, Adán Medrano, is traveling to Russia and will be cooking classic Texas Mexican tacos for the official 4th of July festivities at the US Ambassador’s residence in Moscow. Invited last February by the US Embassy to present Texas Mexican cuisine, Medrano enthusiastically said yes to this unique opportunity for culinary diplomacy, the chance to introduce Russians to the delights of red guajillo chiles, supple flour tortillas and of course, complex, fiery salsas.

The embassy staff, working with chef Medrano to locate the necessary equipment and ingredients, will create an actual food truck experience by parking a food truck smack on the grounds of the historic and luxurious Spaso House in Moscow, home to US Ambassadors since 1933.

Muscovites socializing at this by-invitation-only event will taste flavors that represent street food savored on many a night in Texas cities like Houston, San Antonio, Dallas, Austin and many others. Medrano has written extensively about this Texas Mexican cuisine that has ancient roots on both sides of the Rio Grande, long before it was a border. His new book on the subject is “Don’t Count The Tortillas: The Art Of Texas Mexican Cooking,” published by Texas Tech University Press.

The Moscow menu features two tacos that are traditional in Texas Mexican cooking, “Carne Guisada,” (beef) and “Puerco En Chile Colorado,” (pork), cooked by Medrano, who’ll be working with local Moscow kitchen staff. Most of the ingredients will be locally sourced from markets around Moscow, but the dried chiles and tortillas had to be shipped personally by Medrano from Houston directly to the US embassy in Moscow by diplomatic pouch.

Serving tacos from a food truck at the US Ambassador’s residence symbolizes hospitality, welcoming, and good will, says Medrano. It’s a diplomatic gesture that Medrano describes as “tortilla diplomacy.”

In this case it’s flour tortillas because they are traditional and distinctive as a staple in Texas and Northern Mexico. When they reach out to collect their flour tortilla tacos from the truck window, Russians who may be having their first ever taste of tacos, will also get two freshly made salsas, a mild red salsa of pan-roasted chiles, and a hotter green creamy salsa. Russians don’t normally eat hot foods, so Medrano is holding back on the salsa heat, while keeping all of the flavor.

The unique street food experience is about making connections, says Medrano. “Our Texas Mexican tacos are delicious, and they can help us make wonderful new friends in every part of the world.”

Hosted by Chef Made Karyasa, who leads the team of Bejana, the resort’s signature Indonesian restaurant, the tour begins with an early morning trip to atmospheric Jimbaran Market. Here, Chef Made points out unique island ingredients and advises his guests on how to select the freshest seafood and local produce. Back at the resort, there is a quick tour of the Chef’s garden to pick fresh herbs before the cooking class begins in earnest. Taking place in the evocative Culinary Cave on the top level of Bejana restaurant, participants are treated to panoramic views over the Indian Ocean.

Chef Made, a finalist in ‘Top Chef Indonesia,’ brings vast experience and knowledge to his culinary workshops. As he explains, spices are the key to good Indonesian cooking, “If you make a good spice paste the rest naturally follows,” he says. The class commences with guests learning how to grind fresh spices, from galangal to lemongrass to coriander seed and shallots in an ulekan (mortar and pestle.) The crushed ingredients are then fried to release their fragrance and blended to create a spice paste which forms the basis of every dish. Highlights on the cooking class menu include tasty specialties such as Gado Gado – tofu and vegetables in peanut sauce, Soto Pesmol – seafood and coconut soup from Jakarta, Ayam Betutu – Balinese signature roasted chicken, and a tasty desert of Pisang Goreng – banana fritters. There is incentive to learn well as cooking class attendants will sit down to enjoy the fruits of their labor for lunch, as they dine with the chef.

Female entrepreneurship is on the rise. According to the 2018 State of Women-Owned Business Report by American Express, the number of women-owned businesses increased a dramatic 31 times between 1972 and 2018, rising from 402,000 (4.6% of all firms) in 1972 to 12.3 million (40% of all firms) in 2018.

Nationally, the number of women-owned businesses surged 58%, while all businesses increased only 12%. The National Federation of Independent Businesses (NABI) reported that the number of Ohio women-owned businesses in the state grew 37 percent since 2007 while the Cleveland Metropolitan Area showed slightly more than a 52 percent increase.
